Sweet Potato Black Beans (dry or canned, I use dry) Pickled onions (I made my own, you can buy already made) Salt Chili Powder Cumin Fresh garlic La Banderita wrap Avocado Salsa Cheese (I used Cotija) Cilantro (optional)
Cut the sweet potato into bite sized pieces, brush with evoo and sprinkle with Himalayan sea salt, chili powder, garlic powder and cumin (425 approx. 45 minutes turning every 10-15 minutes) Cook the black beans and some minced garlic until soft (if dry, or you can used cans) Mash the potatoes when they are done and combine with the sweet potatoes La Banderita carb smart wrap (regular or whole wheat) Put the amount of mixture you want in the wrap, top with pickled onions, close the wrap Serve with avocado, more pickled onions and fresh salsa, and a dash of Cotija cheese (or any cheese of your choosing) and a sprinkle of cilantro.

Thanks for your encouragement on my weekly goals -- I already have to tweak them a bit--my second fast was not quite as successful as the first because my blood sugar got too low. Nothing dangerous, just a cautionary sign to maybe go a bit more slowly. I'll be trying 36 hour fasts for this week instead of 42 hours. 9 days ago

I feel sorry for the politicians, trying to make decisions which will keep people safe while at the same time keeping the economy healthy... they end up pleasing no one, and I expect that the next elections, federal and provincial, we will be seeing some changes... not necessarily for the better. 12 days ago
