I don't do any tracking at all, that's one of the things I love about this. But I had already been eating very low carb for years in order to keep my A1c under control. About the only carbs I was eating were sweet potatoes and starchy vegetables.
I had also already cut out all grains as you might remember, now the only one I've put back in is rice. I find that at least once a day I'm craving some rice cakes, but I have no portion control with those - if I buy a pack I'll eat them all. So I'm cooking up batches of brown rice and freezing it in one-cup portions. I don't weigh or measure anything else, but I do measure the rice because I feel like it can get out of hand.
But I'm eating as much fruit as I want at this point. What I really concentrate on is getting in enough good fats. Since I have problems with dairy and can only eat a small amount of nuts without my digestion going haywire, this has been my biggest challenge. Lately I've been buying a lot of oily smoked salmon which is a treat because it's expensive. Sometimes I'll close with a little bowl of olives and some peanutbutter - I don't measure the peanutbutter but I know about two tablespoons is what I can get away with stomach-wise. I found some wonderful chorizo I have to order from Amazon, a couple pieces of that is also a nice fat. And I put avocado mayonnaise in everything it could go in and cook liberally with olive oil.
I really think the fasting is too hard unless you get those fats in. It seems counterintuitive to everything we've always done, but the fats help me lose weight.
So anyway I guess my answer would be go ahead and eat the carbs you feel like you need, and then if you're not losing the way you want to you can adjust.
