I tried something a little bit different these last two days. I ate healthy, no sugar, lots of water, but rather than looking at the maximum I could eat, I concentrated on low impact exercise, walking with my wife in shopping trips. After going through two weeks of plateau, I ate 1,000 calories more than my typical 1,500 calories a day. By adding exercise and moderate food, I lost 6 lbs. in one day. I am sure that a lot of it was water but it broke the plateau.

After encountering so many problems with my health, I have decided to return to a plant-based diet. No eggs, meat, fish, or dairy. Drastic steps for drastic challenges. My dinner was composed of tomatoes, potato salad, Greek pepper rings, cucumbers, carrots, squash, stewed tomatoes, okra, onions, red onion, lemons, peas, collards, baked sweet potatoes, jalapenos, long-grain rice, pineapple, pears, tangerines, and beets. Do I feel deprived?? Are you kidding?

Barbecue veggies today on the Foreman grill and so good.
Today's count was at least 30 servings of veggies and fruit for barbecue veggies as others concentrated on meat.
I also enjoyed a delicious Tuscan style Portabello Mushroom burger. Better than hamburger or turkey and far less in caloric value. 170 calories.

307 minutes walking and shopping with my wife for clothing and gifts for my beautiful grandchildren. They are great motivators.
I used yesterday's Spark Recipe, couscous, butternut squash, and spinach, added two Roma tomatoes, and stuffed these beautiful bell peppers with it. YUM.
Twenty plus veggie servings today. Of note were the two portobello burgers and mixed veggie packs, including carrot, onion, bell pepper, jalapeno, habanero, and white button mushrooms.

Today I have reached a milestone. Not only have I lost another two pounds marking one-half of a ten pound goal for the month, I am now 70 lbs. down from my start. And no longer "morbidly" obese, just severely obese. Bitter-sweet.
Tonight was pizza night at the local pizza parlor where grandkids ran to play games to win tickets for prizes. I spent forty minutes running from kid to kid with game tokens. Add sixty-three minutes shopping and talking.

I am very thankful to have reached the goal of changing my status from morbidly obese to severely obese, a drop in my body fat to 3.9.

The challenge tracker only allows one to enter up to 30 servings but today I incorporated 39 plus veggies, fruit, and plants (seasonings). Ate most of it by finishing some left overs before going to the salad and vegetable bar for Father's Day at the local Western Sizzlin. Still managed to stay under 1100 calories. The photo is tonight's dinner. Not pictured are a cup of cabbage and carrot slaw, 1/2 cup of peaches, 1/2 cup of pears. I resisted the dessert bar.

Seventeen plus fruits, veggies, and plants today, to include a great Olive Garden salad and a Spark recipe for supper: a kidney bean and brown rice chili with cherries, pistachios, and tangerine. So Tasty!

16 plus veggies, fruit, and plants. Enjoyed a delicious rotini garbanzo and garlic dish. Rotini, garbanzos, garlic, turmeric, black pepper, thyme, cumin, curry, green olives, whole corn, onion, silk soy and vanilla yogurt alternative, lemon, and salsa. Soooo good.

Portobellos, onion, jalapeno, cumin, chili followed by a great 2 meal bowl of steamed veggies with yellow squash, zucchini, potato, carrots, green cabbage, purple cabbage, bell pepper, jalapeno, juan canary melon, watermelon, pistachios, ginger snaps. So good.
Today was one of my favorites: Portobello burgers with mixed steamed vegetables to include 2 types of cabbage, two peppers, potato, carrots, 2 types of squash. Followed up with 2 types of melons, pistachio nuts and ginger snaps. So good. I cooked two meals of veggies so I am going now to eat the second half. Smack.
Twenty-six plus veggies, fruit, and plants today. I made a delicious homemade hummus today, eating it with cucumbers and rye crisp bread. Easy to eat so much choice with Golden Corral calorie placards.

30 plus veggies, fruit, and plants today, to include this meal of 4 tacos made with Ole's Spinach and Herbs tortillas at 50 cal. ea filled with pinto beans, tri-colored rotini, tomato, onion, turmeric, salsa, cumin, jalapeno, extra virgin olive oil, rosemary, black pepper, fennel, and basil. Delicious.
Ate my favorite snack tonight. Cookies made from 2 bananas, 2 TBS of PB2 powder, 1 cup of oatmeal, 1/2 tsp cinnamon, and 30 raisins. About 45 calories each. Makes 14. (oops I ate the other 5).

Today's 18 veggies, fruit, and plants included a wonderful veggie pizza that only totaled 584 calories. I used an ultra-thin crust that I found in Dollar Tree and and veggies that were discounted for approaching the expiration date. Still a great flavor and great caloric nutrition.

A delicious and healthy evening meal choice. 619 calories.
These OLE spinach tortilla wraps have revolutionized my thinking about healthy Mexican food eating. At only 50 calories per serving, a wrap becomes a great replacement for a 2-slice sandwich, and adds the benefit of spinach and flax seed as ingredients.
Starting over after regaining 70 lbs previously lost with Spark People. Consistency is my new goal.
Losing self-discipline is no cause to celebrate. After multiple surgeries, a loss of motivation, and a rethinking of low-impact exercise, I have returned to my place of solace in Spark People, where I remember having previously lost 70 lbs. The good news is that after my recommitment and a 21-day streak of 10-20 minutes of daily exercise, logging food and water, I have lost my first goal of 11 lbs. Never give up.
My wife and I prepped Saturday evening for our Sunday lunch: beef stew with 7 added veggies, onion, bell pepper, potato, diced tomato, mushrooms, mini carrots, and fresh ginger. Additionally, we added paprika, chili, dill weed, curry, lemon pepper, and salt. For dinner, I added a jalapeno, banana, and a serving of peanut butter crackers. With 20 minutes of low impact exercise, I easily kept in the caloric limits.

Ten minutes walking to and from the mailbox plus twenty minutes on the peddler equals 30 minutes. Low impact and doable for my acute bone-on-bone condition and lymphadema issues.
Today, I cooked a makeover recipe for Split Pea Soup with sausage. The nutritional values of this dish are great and provide potassium, vit. A, b12, 6, A, folate, iron, thiamin, and others. 1 serving= 271 calories.
Twelve pounds down in twenty-three days logging exercise, food, and water. I went with my wife to the doctor and thought I might be challenged to stay within my caloric budget. To my surprise, between breakfast and lunch (breakfast for lunch at the Cracker Barrel), I managed to only go over 10-15 calories past the plan. I even ate a bisquit and piece of bacon that my wife didn't want. Five to seven fruit and vegetables tonight with plenty of extra calories after exercise.

Breakfast!!! That's what I'm talking about. 3 servings of fruit, 1 cup of skim-milk, 2.5 servings of coffee with light creamer, 6 cups of water, one slice of 70 cal. bread, and 2 eggs covered with pepper and 0 cal. hotsauce, all before 10:00. This day is turning out to be great.
I was amazed today as I counted the calories. 8 oz of bbq pork ribs, no added sauce, baked beans, mixed steamed vegetables with added asparagus.Water to drink. 1054 calories leaving me 674 cal. For dinner and snack. Blessed Sunday, everyone!

My lil side salad bowl is loaded with good things. A Dole chipotle and cheddar salad kit (I'm eating the whole pack, 210 c.), 1/2 avocado, 1/2 cucumber, 1/2 tomato, 1 cup mushrooms, 1 Tbs ground flax seed, 1 large onion, and one Tbs Braggs Apple Cider vinegar. = 504 cal. Add 325 cal. for 2 servings of pollock, 3 cups of steamed broccoli and califlour with 10 steamed baby carrots. The entire meal = 834 cal. fitting nicely into my daily caloric budget. No one deprived here.
The first thing in my mouth today, 16 oz of water. This is destined to be a good day. Now, for coffee!

Happy Monday, everyone! My salad for the day includes 4 cups Dole garden salad (a mix of 5 veggies), cucumber, tomato, ground flax seed, tumeric, black pepper, 2 Tbs Bragg's apple cider vinegar, 2 Tbs lemon concentrate, 2 Tbs Hidden Valley Greej yogurt dressing @ 60 cal.
I hope you will read my recent blog entitled, "Help me! My leg is leaking!" to see how I wrongly accused this poor creature.
I thought about having frog legs and a little side salad, but opted for fried chicken and potato salad, still within the caloric limits.
Dinner was sooo good. 4 oz New York strip, spring vegetable medley w/asparagus and bell pepper, mushrooms, onion. Five item Dole salad plus cucumber, tomato, fat-free cheddar, balsamic vinegar, jalapeno, curry, olive oil, cumin, dill, and paprika, w/ water to drink=472 calories. New York strip was air-fried and delicious.
Today's treat, a shrimp and crab boil, 460 cal.= deliciousness.
My what a meal! Greenwise turkey sausage, (no hormones or antibiotic), low sodium light kidney beans, onion, jalapeno pepper, adobo, curry, cumin, chili powder, dill weed, and 0 cal yelow mustard. Wash it down with 0 cal diet Check Freshy. = daily total of 2158 cal before 3000-4000 cal exercise. Plenty of space for a healthy fruit snack later.

It's hard to resist this crab and shrimp seafood boil at 722 calories. I made enough for another meal, so I am prepped for Monday or Tuesday. Wish you here.

I wake up late, missed breakfast so had plenty of caloric budget left for the day. Dinner= vegetables and salad = 367 cal. Will eat fruit for a snack to compensate. Off to exercise.
I am still thinking about last night's dinner. Cutting the fat off left a nice 6 oz round steak, potato with lite cream cheese spread, salsa. Mixed spinach, 2 lettuce, tomato, carrots, balsamic vinegar dressing, So Real cheddar flavored shreds. 628 cal. Total for the day= 2557 cal with 1839 cal remaining after 70 minutes of shopping/walking and peddling on the peddler. One pound down at weigh in this morning, 22 pounds in 61 days.
Let's eat breakfast! 2 sandwiches from the stuff of one. 2 sourdough English muffins, 1 egg, 1 tbs cream cheese spread, 1 jalapeno pepper, 5 slices LandOFrost smoked turkey breast, one banana, one plum, 20 oz H2O = 592 cal. I am allowing more calories because I just finished 20 minutes of seated cardio and 50 minutes on the pedlar, and, well, you know, it's the weekend. ;).
Prepped and ready for lunch today: lean hamburger, shredded chicken breast, elbow pasta, 9 veggie soup= 250 cal. per cup.
On my way to physical therapy this morning and lots of good exercise. Get it where and how you can.
This morning I enjoyed 45 minutes of lo-impact water aerobics and water jogging to help manage lymphedema, bone-on-bone knees, and lower back for 553 cal. burned. This evening I will use the peddler for 30 plus minutes while watching the news and reading my daily SPARK articles. But first, a needed pedicure at the podiatrist.
I confess that I went with my wife to her doctor's visit before taking her to Golden Corral. It was easy to stay within the caloric budget, even with a small piece of the rich carrot cake they are known for (almost 1/2 of the total meal, yipes, but good). 836 cal. for the entire meal. This morning was my lowest weigh-in in 76 days. Only 4 more pounds til my 90 day goal in 13 days.
Lots of salad and veggies today with a thin-cut ribeye. 30 min on the peddler to work it off.
Today, I am one pound lower in my 90 day streak and one level higher in Spark Points. Thanking God for SparkPeople and the community here for their wonderful support.

Microwave omelet with 1 egg, 1 tbs shredded cheddar cheese, 3 pcs LandOFrost smoked turkey, 2 tbs skim milk, 1 large jalapeno pepper, 1 dash black ground pepper, 1 large banana, 1 clementine, 1 plum, 1 peach yogurt 4 oz, and of course, 2 cups of coffee with 1 tsp hazelnut creamer = 429 cal. Great way to start the day.
Tonight, I am using a product called Edemawear to reduce the effects of my lymphedema diagnosis. It helps to prevent cellulitis and is eady to put on.

I'm calling this dish Golden Gourmet Senior Soup, a combination of four home-delivered senior meals with healthy mixes of veggies and protein entres. I sauteed an onion, red wine, and olive oil before adding the combo meals. The addition of a can of chipotle peppers was a twist for my personal taste. Not for the feint of heart. Amazingly, only 118 cal. per cup.
No deep dives in this pool, but I am able to do low-impact walking and, believe it or not, jogging on the underwater treadmill. I am able to get two workouts per week to help manage my lymphedema diagnosis. Why not join us at Lymphedema Supporters if you are challenged with this condition.

Last night's shrimp and pasta plate helped to balance 2832 calories burned in exercise today. Dinner tracked at 1 cup pasta sauce, 120 cal.; .3 cup english peas, 42 cal.; 5 oz. spaghetti 525 cal.; 13 med. shrimp, 160 cal.; 1 med. mushroom, 3 cal.; 2 tbs. nutritional yeast, 60 cal. = 910 total calories. I had to leave 1699 calories on the table, so to speak, that I couldn't eat today.
According to Spark People and others, the majority of people who lose weight and maintain it, eat breakfast. Why not join us in this healty habit? Today, mine is 2 sourdough English muffins, one with one egg and one oz. cream cheese, the other with one tbs of peanut butter. Oikos yogurt, one Roma tomato, one half orange, and of course, H2O. Buon appetit!
Time for lunch, and then a cat nap.
When you get older, my doctor says it's not a bad idea to make sure you are getting a boost to important nutrients. B12, B6, D, folate, C, calcium, etc. Good morning to you all.
Today marks 31 years that I have been married to my beautiful wife. After 2 children the doctors said we couldn't have, 8 grandchildren the Lord told us about before they came, years of trials and tears of joy as the Lord delivered us, I can say, It's been worth it all. Happy Anniversary to my beautiful wife, Sharon.
I woke up this morning at 6 am, prepared for the ride to physical therapy, prayed with my breakfast, and mid-meal thought of you all. Have a great day and weekend.

How strange that I broke a plateau with this 8 oz tbone, zuchini, squash, and salad. The key may have been in the 3622 calories burned in a short walk and work on the peddler.
A late-night water exercise at my hotel visit in Gainesville, FL allowed a caloric burn of 65 minutes of water aerobics and water jogging for a total of 956 calories. It was Coooold but worth getting the workout.
I have accomplished one more Spark Level, for which I am thankful.

Today I shared a great meal with my wife at Golden Corral, all within recommended caloric suggestions.
There was no snow on my walk today, but my warm southern version is nice.
