Looking back and looking forward....

Looking back: I was reading some of my old blogs where I was making soup for the church meals on Wednesday night get-together bible studies.... I started out as just a volunteer as wanting to help contribute somthing and knew people would probably enjoy a nice hearty healthy soup and it would give me an option to eat if the food offered that night was something fried or something not to my liking, such as Mexican type food. Now I have been enlisted as the main cook... not just the soup cook. We have been shut down right now because of the Covid 19 virus but should be starting up soon again... just before we went out, I fixed a pork loin roast with a baked butternut squash with fresh pears that was a big hit with everyone.... once a month we have food give away from Salvation Army for seniors and disabled people at our chuech and I qualify in both those catagories so pork loin, squash and pears were all part of food give away... the only thing I bought that might was several bags of salad mix for a green salad which the church reimbursed me for.... everyone went away with full belly and full mind from bible study and I managed to stay within guidelines of dietary plan... woohoo
Another night, I had a baked potato bar and had all sorts of topping for the potatoes from chili to cheeses to broccoli to onions to.... what ever was left I brought home to make soup in the future... the toppings could also be used on the salad as one end was potatos and the other end of the bar was salad so you could use tomatos and bacon bits and broccoli and.... on potato or salad or both.... everyone seems to enjoy the variety and rainbow of colors that I bring to the table and the fact that they get to try new things....not the same old mac and cheese or corn dogs or hamburgers/hotdogs or tacos or fish sticks and french fries.....
When we get back together, I will ask for input from others as to what they would like to see on the menu and see if I can get a month plan in advance. I am not a cook by trade... I am a nurse by trade but do like to cook healthy and never got this cooking for one down... when I make rice, I still use the whole bag and then freeze small batches to reuse later in soups or stir fry or some other recipe
Looking forward: Since April 23, 2020 I have been following the "5 Factor Diet Plan" by Harley Pasternak. While I don't agree with all of his thought processes, I am pretty much following his diet plan an in the past month I have lost 14.8 pounds. Woohoo for me. What is even better is that my fasting blood sugars (yes, I am diabetic) have come down from around 150-175 to 90-95 (normal being 60-100). I am still on oral medication but looking that soon I might be able to reduce the amount that I am taking...especially if I continue to lose weight.
I am real close to getting out of 200's... I see the cardiologist at the end of August for yearly check up... would like to be below 200 when I see him... it probably has been 15 years sincxe I was that low and his jaw is going to drop.... can't wait.... yes I can ... I want to be below 200 when I see him
