Progress Doing the My Plate

I am slowly progressing doing the My Plate style of eating. Breakfast is either oatmeal with fruit (no sugar) or green smoothies made out of yogurt, frozen bananas and frozen mixed fruit, spinach, and vanilla protein powder. I don't think it's quite half my plate of veggies, but it is half my plate veggies and fruit, so I consider that a win.
Lunch and dinner are easier. Lunch is a sandwich with lots of veggies on it-- lettuce, tomato, and onion-- plus sliced cucumbers, baby carrots, and pea pods on the side. Some days I have ranch dip with it and other days I don't. Trying to wean myself off the ranch but it does taste good. Dinner is chicken or fish right now with brown rice or potatoes and lots of veggies on the side-- zucchini, roasted broccoli, asparagus, or frozen green beans. I also bought a bag of frozen "California style mixed veggies." Not sure why they are California style, but they are cauliflower, carrots, and broccoli. I will save that for the end of next week when I run out of fresh veggies. I also have either a small lettuce salad or sliced tomato salad with dinner if I have room on my plate. I made some chicken pasta casserole last week and I am having a small portion of that with veggies, and I am making a Tex-Mex hamburger casserole tomorrow that I will have with plenty of veggies.
I am also making sure I stick to ONE PLATE No S style on the weekdays. On the weekend, I can have more salad with dressing on the side as a treat. Because yes, salad is a total treat for me!
I am down about a pound this week as of today. I am hoping to keep it off for weigh in Tuesday night and Wednesday morning. I went over my calorie count by about 100 calories today, but that's not a lot so I am not worried. I had a lot of sodium today, so I will show some water weight tomorrow, but I will do some sweaty exercise over the next couple of days to take the water weight off. So that's my progress so far.
Today I'm Grateful For...
1) That I found some new cloth face masks at a store today and that I found others online to order. The cloth ones are rather hard to find, but I prefer them to the disposable ones.
2) That the weather is cooler this weekend and will be cooler all next week-- in the low 90s.
3) That I finished my readings for my class next week today.
