I was late to this party!!! LOL. It didn't turn out as pretty as the tutorial but holy eggtastic batman! I saw these guys on Facebook showed how to do this and there are other people demonstrating this on YouTube, so I had to attempt it. Dear me, what would we do without these resources during a pandemic or life in general. I think my fail was I imagined making it with my small omelette pan and a small tortilla but got carried away with my stuffins. So here it is:
2 eggs whipped; in the omelette pan. I put a tiny bit of mediterranean oil in, for fear of sticking. Let it set up just a little, then lay the tortilla in the still uncooked top of the egg. Once it's cooked....set up pretty thoroughly, you have to kind of guess but a few minutes, flip over and layer your tasty food on top. I chose asparagus, ham and swiss cheese. Salt and pepper. Then you roll it all up nice and neat. Eat it rolled in your hands. This one was 339 calories. Like I said I love breakfast. After 71 years on this earth I have come to understand I do better if I eat a big protein rich breakfast, my main meal at noon-1 p.m. and light meal around 6 (sometimes just like an appetizer situation) I don't know how that would have been manageable when I worked my 12 hour shift as a nurse. No worries in retirement. Sorry, I took to gloating a little there. I can't wait to try this again using different fixins'.
Today.... Here in Chicagoland we have gorgeous weather. Hossa and I will be out and about in it. I have been shoveling snow off the drive and now I'm shoveling bits back on so it melts faster. Those who follow me know I live only to bask in bright sun and gardening. This weather brings hope that very soon I will be experiencing some dirty fingernail therapy. I ordered some plants yesterday, pulled out my garden maps to work on the plan. I'm thinking about creating a green house kind of removable topper for my salad garden box. Huge dream, maybe. Extend the season a little. Dreaming......
