...and keeps your foot out of your mouth!Here is my Covid-19 "pet" that I adopted in March. Her name is "Quaran-Tina". This is a great sourdough starter, and really pretty forgiving if you forget it for a day or so, or a couple of weeks in the refrigerator. Quaran-Tina turned into this lovely loaf this evening! A true genius recipe from King Arthur Flour called Do-Nothing Sourdough Bread. I have tried several before and they were just ok. This will be my definite go to and it has no fat in it at all...no nuts. Secret is the 1/2 cup white beans. Babies were always the delight of her heart....even when we grew up!Please, please be careful. My beloved Mother (and best friend in all the world) died yesterday because a mild case of Covid complicated her COPD and heart problems. Not being able to be there for her, and now not being able to travel for a funeral makes this so much more difficult to process. Please, please be careful.Gone, but never forgotten, and lives on through her children, grandchildren, great grandchildren and the great-great grandchildren. We will always miss your presence among us as we knew it.Together again at last.And do whatever you can to make them happen!Refuse to let the haters win.....whoever they are!Made sourdough bread again todayBecause you never know who a day will unfold....Been a long first two weeks of the year already....but....Now multiply that by 3, or 5 or 20 and think what a HUGE difference that is! A good friend and his wife and daughter in Michigan all have covid. As I write his wife is being rushed to the hospital. Sending healing thoughts and prayers. The recipe makes two loaves, one for us and took one over to our neighbor for their supper.A friend sent me this....look who came to our house in BC, Canada!Thought some color might help brighten up a dark cold winter Sunday.Pantry cleaned and reorganized!Whole lot of chopping going on.....Glad I already knew this and tried to live it before I lost my Mom to Covid this month. She taught all her children this throughout her long life. Love you and miss you always Mom.Thought many of us could use some color and beauty as we begin the new month of February.Made special tacos today....this "meat" was cauliflower, carrots onions with seeds and nuts. It has been slow, but it is coming off.Even just walking to the end of a driveway can be a start and it counts! Do what you can, listen to your body, and find the path that is right for you, not anyone else.Even though it is extremely cold outside, here is some color to warm your heart inside!Made whole wheat sourdough bread for dinner to go with soup....great for a snowy winter evening. After the death of my Mom, a beautiful continuation of life to welcome this sweet little girl.Way too true!Today is my parents 75th wedding anniversary...and the day we bury my Mom, who is now reunited with my Dad after the last 7 years of missing him daily. Have a wonderful celebration for those who can gather....the rest of us are there in spirit.Just because sometimes you need one....Did not lose 5%, but I did lose 4.2%, so that is a definite win!Great challenge coming to completion. Sooooo good! and totally whole food plant based.After one year and a loss of 38 lbs, I really am convinced this is the way for me to eat. All my numbers from the lab work are great, and I am off several medications. Not keto, not vegan, but whole food plant based. Tons of info available on line, but work with a doctor if possible. My cardiologist got me started.For those wondering about the color graph I posted and the percentages, it is trying to give you an easy to understand sense of amounts of food groups. Iâ€™ Put some others on todayâ€™s blog if you are interested....like this one.....What really helps me is paying attention to calorie density in food. Pick lots of lower density vegetables and fruits, add higher density legumes and grains, judiciously add seeds and nuts....limit seriously anything highly processed. But it is NOT about trying to get it perfect, AIM for healthy and how it makes you feel.Even though it is dreary looking and raining....I have been about 85% whole food plant based for just over a year at my cardiologistâ€™s recommendation. I have lost38 lbs and all my lab work is excellent. I only take vitamin D and B-12. Heart rate, blood pressure and cholesterol is all right on target. I never would have believed I could do it, but really you do start to settle into it after a bit. And not having to take any more water pills, daily tylenol and acid reflux meds is a real motivation to continue.Lots and lots of veggies today!Chop, chop....healthy eating!Got my team for the Spring Challenge to start this coming SaturdayMade red lentil flatbread to go with soup for supper tonight. 1 cup lentils soaked in 2 cups of water for 3 hours. Then blend with a pinch of salt and pour about 1/4 cup into non-stick pan (or cast iron with parchment paper), tilting to spread it out. Cook like a pancake, flip and on to the next one. Easy, peasy, really.Pool again this afternoon....there were only 6 of us in this whole area. Easy to keep your distance when it is like this, and no one talks to each other just to keep everyone safe who is not yet vaccinated.My new grand niece....maybe next year I will get to hold her!I have now lost 40 lbs in 13 months. THIS 5 gallon container full of water would weigh that amount. If you are feeling like nothing much is happening....here is one stick of butter....4 ounces. ONE pound is 4 of these. So start adding them up visually to see how far you have come.....5 lbs would be 20 of them off your body. Don't give up, keep starting again until you really start to feel better. Using visuals to help can keep you going. Don't focus on how far you have to go, rather be grateful for each small step towards your goal!Made vegan tacos today....so good! No one could guess there was no meat in it, kept asking if I was sure there was none.
