It’s been quite a while since I posted a blog here. There have been lots of changes in my life, and I am finally getting back on track with my weight loss/health improvement journey. This blog started as a team posting for the Engine 2 Diet/Forks Over Knives team. It began as a list of dates and the food being celebrated that day. That seemed so boring, so I decided to add a "couple of recipes." This is the result.
August 2 = National Ice Cream Sandwich Day
Here are 3 of the most tempting recipes I could find for vegan ice cream sandwiches:
This recipe for Classic Vegan Ice Cream Sandwiches is from Kris Holechek Peters at The Splendid Table www.splendidtable

Add some blueberries to the raspberries for an even tastier berry treat. www.godairyfree.o
If you really want to knock yourself out, try this Vegan Cheesecake Ice Cream for the cream component www.godairyfree.o
August 8 = National Zucchini Day
Who hasn’t discovered a zucchini left on the porch by a neighbor with an overabundant crop at some point or another? Whether your preference is sweet or savory, there are tons of zucchini recipes to whet your appetite. Sam from It Doesn’t Taste Like Chicken posted this recipe for Baked Zucchini Fritters
Though some of these recipes need to be modified, you’ll find lots of ideas for using zucchini in this post on Chow, “25 Recipes That’ll Use Up Zucchini” www.chow.com/gall
Here’s a great savory muffin recipe from Alexis Joseph on Hummusapien; if you use unsalted almonds, you’ll have a much healthier muffin www.hummusapien.c
For sweet treat, try Angela Liddon’s recipe for Oil-Free Chocolate Zucchini Muffins ohsheglows.com/20
or Isa Chandra Moskowitz’s oil-containing but delicious Zucchini Banana Bread. An enterprising person could probably eliminate the oil quite easily with a small recipe revamp.

This recipe for Rice Pudding with Cinnamon and Raisins from Beverly Lynn Bennett is a classic www.veganchef.com

Who doesn’t love bananas? From nice cream to pie to pudding to smoothies, bananas seem to be in everything. I opted for decadence when I selected Alisa Fleming’s recipe for Banana Cream Pi 4 All, developed for a National Pi Day contest. All I can say is that I want a slice to eat right now! www.godairyfree.o
