August Food Celebrations Day by Day

Thursday, August 06, 2015

It’s been quite a while since I posted a blog here. There have been lots of changes in my life, and I am finally getting back on track with my weight loss/health improvement journey. This blog started as a team posting for the Engine 2 Diet/Forks Over Knives team. It began as a list of dates and the food being celebrated that day. That seemed so boring, so I decided to add a "couple of recipes." This is the result.

August 2 = National Ice Cream Sandwich Day
Here are 3 of the most tempting recipes I could find for vegan ice cream sandwiches:

This recipe for Classic Vegan Ice Cream Sandwiches is from Kris Holechek Peters at The Splendid Table www.splendidtable
.org/recipes/classic-vegan
-ice-cream-sandwiches

Dana from Minimalist Baker created these delightful Chai Ginger Ice Cream Sandwiches. A batch of these doesn't last very long at my house! minimalistbaker.c

Chef Chloe Coscarelli developed this recipe for Chocolate-Dipped Ice Cream Sandwiches; sprinkles are optional. chefchloe.com/swe

August 3 = National Watermelon Day

August 4 = National Chocolate Chip Cookie Day
Some cookie recipes are lacking in flavor or texture. You won’t find those deficiencies in these two recipes for chocolate chip cookies. The first is from Mattie at VeganBaking www.veganbaking.n

The second recipe is from Angela Liddon ohsheglows.com/20

August 7 = National Raspberries and Cream Day
Instead of dairy cream, use Tal Ronnen’s recipe for cashew cream for your berries. www.culinate.com/

August 8 = National Zucchini Day
Who hasn’t discovered a zucchini left on the porch by a neighbor with an overabundant crop at some point or another? Whether your preference is sweet or savory, there are tons of zucchini recipes to whet your appetite. Sam from It Doesn’t Taste Like Chicken posted this recipe for Baked Zucchini Fritters

Though some of these recipes need to be modified, you’ll find lots of ideas for using zucchini in this post on Chow, “25 Recipes That’ll Use Up Zucchini” www.chow.com/gall

Here’s a great savory muffin recipe from Alexis Joseph on Hummusapien; if you use unsalted almonds, you’ll have a much healthier muffin www.hummusapien.c

For sweet treat, try Angela Liddon’s recipe for Oil-Free Chocolate Zucchini Muffins ohsheglows.com/20

or Isa Chandra Moskowitz’s oil-containing but delicious Zucchini Banana Bread. An enterprising person could probably eliminate the oil quite easily with a small recipe revamp.

August 19 = National Potato Day
Well, potatoes and I are old friends; so it’s nice to know they have their own special day. How about a knish or two today?

The filling in this knish contains garlic, parsley, and tofu. www.peta.org/livi

Vegetarian Times put chopped spinach in this knish. Oh, yum! www.vegetariantim

August 22 = National Eat a Peach Day
Peach Cobbler is a classic dish. Here’s Angela Liddon’s twist, End of Summer Peach Apple Cobbler ohsheglows.com/20
11/09/19/end-of-summer-pea

Isa Chandra Moskowitz hadn’t stopped using oil when she wrote this recipe for Brown Sugar Peach Muffins, but the results were so tasty I had to share www.theppk.com/20

elt-muffins/
To avoid the sugar and oil, try Susan Voisin’s Sugar-Free (or not) Peach and Vanilla Muffins blog.fatfreevegan
.com/2009/08/sugar-free-or
-not-peach-and-vanilla.html
Or just have some slices of peaches plain and unadorned. It’s freestone season, so you won’t have to do anything but pop out the pit, no carving required. Want a savory peach dish? Try Jenee Claiborne’s beautiful Cucumber, Avocado & Peach Salad rawfoodrecipes.co

August 24 = National Waffle Day
Who says waffles have to be sweet? These Savory Southwestern Waffles from Vegetarian Times would be great for brunch or a light dinner www.vegetariantim
es.com/recipe/southwestern
-savory-waffles/
These basic Whole Wheat Vegan Waffles from Love and Lemons could be waiting on your table for you to load up the with your favorite waffle toppings www.loveandlemons

Not to be outdone, the folks at One Green Planet published “10 Vegan Waffle Recipes That Left Us Awestruck” www.onegreenplane

I am prepared to be awestruck by those gorgeous falafel pancakes.

This isn’t a popsicle recipe, but these hemp macaroons do contain cherries … and coconut and other delights. Make them for a special treat. blog.bobsredmill.

August 27 = National Banana Lovers Day
Who doesn’t love bananas? From nice cream to pie to pudding to smoothies, bananas seem to be in everything. I opted for decadence when I selected Alisa Fleming’s recipe for Banana Cream Pi 4 All, developed for a National Pi Day contest. All I can say is that I want a slice to eat right now! www.godairyfree.o
rg/recipes/dairy-free-bana
na-cream-pie
On the other end of the sophistication pendulum is the humble banana muffin, the perfect sweet nosh. I really like this Oil-Free Banana Muffins recipes from Somer McCowan at Vedged Out vedgedout.com/201

Be sure to check out her new book “The Abundance Diet.”

August 29 = More Herbs, Less Salt Day
Herbs make almost any dish better. Pasta with herbs is one of my personal favorites, like this Cauliflower Cream Pasta from “Thug Kitchen: The Official Cookbook” – just skip the oil. This link to the recipe includes a segment from a Rachael Ray Show epidsode. www.rachaelraysho
w.com/food/recipes/18762_t

eam_pasta_with_fresh_herbs/

Lemon and herbs are a marriage made in heaven, like this Vegan Lemon Garlic Spaghetti with Sun Dried Tomatoes recipe jessicainthekitch
en.com/lemon-garlic-spaghe
tti/
Since it’s summer, I usually opt for fresh cherry tomatoes and add some fresh basil when I make a recipe like this.

If you find yourself with too many herbs and not enough time to use them right away, check out these ideas and recipes at Ecocentric gracelinks.org/bl
og/5459/taste-it-don-t-was

Herbs are also great to use in breads, like Lindsay Nixon’s Whole Wheat Fat Free Rosemary Olive Bread happyherbivore.co
m/2011/08/whole-wheat-rose
mary-olive-bread-recipe/
Other ideas: dill, rosemary, or other herbs in bean sandwich spread, on potatoes and other veggies, in your rice. The uses for herbs in your cooking are limitless.

August 31 = Eat Outside Day
Sandwiches, wraps, salads – all are perfect for picnics!
Nava Atlas offers several wrap and sandwich recipes in this post www.vegkitchen.co

Pick your quiche or pie, pack a slice or two in a container, then head outside!

You get the picture. Make some food, pack it up, and go outside to enjoy the day!

I’m interested to see the September list of food celebration days. This is where I found the list I worked with for this post. I skipped the days where the food featured wasn't vegan, though I could have come up with some substitutes. Next month ... deliciousliving.c

I hope you enjoy making and eating some of these recipes! I’ll post more next month.
