This Is What Happens When I Shop Without A Plan

Never go grocery shopping without a plan! Usually I have a meal plan in my head if not in my hand when I shop, but I started with a blank page on my last trip. I had signed up for a challenge, but the food plan wasn't released in a timely manner and my fridge was empty. As I saw stuff, I thought of recipes I wanted to make and bought accordingly. I ended up with Swiss chard, broccoli, mushrooms, kale, leeks, bell peppers, tomatoes, eggplant, and some other stuff. I already had items like squash and potatoes. Here's what decided to make.

Breakfast Items:
Apple Harvest Oatmeal and Oprah's Scrambled Tofu (with no oil) from 7 Days of Recipes on Meatout Mondays www.meatoutmonday

Plain oatmeal (I love oats!)

Lunch Items:

Since I have so much other food, I'll probably freeze the whole batch.

Simple salads with the usuals like romaine, bell peppers, celery, carrots, tomatoes, cucumbers, beans, etc. and will include some roasted beets a couple of days.

Engine 2 Hummus was on sale, so I picked up a couple of containers to make Ann Esselstyn's Eggplant Tomato Melt www.clevelandclin

Dinner Items (leftovers are also lunches):

served with black eyed peas seasoned with some liquid smoke and a few red pepper flakes, broccoli, and roasted beets.

I might add some tempeh; it's really good in this stew.

I'm trying to stay away from sweets these days, so I'll just snack on apples. I might break down and make Isa Chandra Moskowitz's The Best Pumpkin Muffins www.theppk.com/20
subbing applesauce for the oil and cutting the sugar back to 3/4 cup. I know sugar is not healthy. I need to find another recipe, but these are SO good.

The next time I go shopping, I'll have a plan! The only hard part about being plant-strong is deciding which recipe to use!

    There are so many recipes out there!!! I'm glad I can turn anything going bad into broth or a smoothie or sometimes juice because I don't like it to go to waste.
