Never go grocery shopping without a plan! Usually I have a meal plan in my head if not in my hand when I shop, but I started with a blank page on my last trip. I had signed up for a challenge, but the food plan wasn't released in a timely manner and my fridge was empty. As I saw stuff, I thought of recipes I wanted to make and bought accordingly. I ended up with Swiss chard, broccoli, mushrooms, kale, leeks, bell peppers, tomatoes, eggplant, and some other stuff. I already had items like squash and potatoes. Here's what decided to make.

subbing applesauce for the oil and cutting the sugar back to 3/4 cup. I know sugar is not healthy. I need to find another recipe, but these are SO good.
The next time I go shopping, I'll have a plan! The only hard part about being plant-strong is deciding which recipe to use!
