Whole 30

So it's been a while! I'm attempting to get back into blogging. Hope everyone has been doing well!!

I'm currently out of work :( My company moved to Georgia. So I'm on the hunt for a new job. It's slim pickings but I'm sure the right job will come along.

I've been working with my trainer again and hitting up the gym while I have the time. Unfortunately a few weeks ago I did something to my knee, it swelled up and was fairly painful. It is finally getting back to normal. We are modifying my workouts so I still get a good sweat session but protect my knee from further injury and letting it heal up.

I also got a Fitbit ChargeHR to help out. It's nice to see my steps, heart rate, active minutes, workouts and my sleep patterns. I join the step challenges with friends...it's fun to compete and cheer each other on. I'm currently doing the Workweek Hustle step challenge. I may not be working...but I'm still trying to hustle!

After a few too many weeks of eating completely out of control I decided to get serious and tackle another round of Whole30. My second week has just begun and I'm thrilled to say I'm down 8 pounds!! I know a lot of that is water weight...but I'm so happy to see the scale moving in the right direction again.

Here is what's been on tap for my meals:

Week 1:
Trader Joe's Bavarian bratwurst
Stuffed Apples (ground pork, chopped apple, onion, cranberries, cabbage, seasonings)
Baked egg whites (for me and Meadow)
Dump Ranch Dressing
Egg Roll in a Bowl
Fresh blueberries, cherub tomatoes, cherries, persian cucumbers, romaine lettuce

Some meal close-ups:
Stuffed apple and salad with dump ranch dressing

Egg roll in a bowl topped with avocado

Creamy coconut chicken & bacon over garlic cauliflower rice and salad with dump ranch

Monkey Salad...My new favorite breakfast!!

Week 2:
Creamy tomato soup
Chicken tenders
Baked egg whites
Blackberries, blueberries, strawberries
Baked sweet tater
Also have avocado, bell peppers, onion, asparagus, spinach, lettuce, tomato, broccoli, carrots

Roasted pork loin, steamed broccoli, peaches & cranberries with a little ghee cooked in the mini crockpot

Here's to a successful second week! emoticon

    Your food looks so yummy! I purchased a Garmin Vivoactive HR a couple of weeks ago. Trying to get back on track post surgery about five months ago. Good luck with the job search! emoticon
