Just a note...all my meals are low in saturated fat. I used 96% lean beef and olive oil for my frying. I used to not eat tacos and sloppy joes because of the extra fat but not they work just fine. I even get a few tortilla chips on my salad. That makes me happy.
Also, I can't have gluten so that knocks out LOTS of easy meals. I usually have a pot of rice and veggie risotto in the fridge or pots of soup. Love that stuff!
