Have a Lot of Green Beans in Your Garden ? Dry Them !!!

First pick your beans or buy them at a farmers market ! emoticon
Wash good to get off any dirt, leaves, etc.
Take off the ends (I leave the pointy ends on)...Cuts your time in half !
Cut beans into 1/2 to 3/4" pieces...No Longer as they won't dry well !!!

Green and yellow beans = 8 cups cut up
Italian Flat beans = 2 cups

Bring a large pot of water to a boil and put in beans and blanch the beans for 3 minutes. Start timing after the pot returns to a boil. They will turn bright green/yellow.

Using a Spider or Slotted spoon, scoop the beans, let most of the water drip off and then place onto you dehydrator trays...I've never done this in an oven so I can't help with that question...but do google how to dry beans in an oven and I'm sure you will find the instructions !

Set your dehydrator to 135F and let dry for 6-8 hours or until they are crispy dry...

From 8 cups of green and yellow beans, I got 1 1/4 cups dried and from the 2 cups of Italian Flat Beans, I got 1/2 cup dried...

After they are all dried, let sit to cool down to room temperature, then put in an air tight container.
Don't for get to label and date the container of your choice. I use mason jars with mayo lids that I saved...

So Easy and Such a Great Space Saver !
Use in soups, stews, etc. Can, also, be ground to make a powder !
