Healthy Egg Muffins with A Healthy Fat Burner Drink!!

After I got my morning started, which was almost close to 12(things happen, so forgive me for staying in bed late) I guess my pain level isn't so good any more, after all I am 50 now!!
I decide to make me a healthy egg muffin for breakfast\lunch . Let me tell you for my fist time trying it, I was in Heaven, it was so yummy. Let recap what I put in it, shall we??

I whisk 2 eggs together in a measuring cup( made it easy for me to pour in my muffin pan)added a little sea salt and black pepper sit it to the side

Sauteed my chopped onions, tomatoes, carrots and added my spinach last( used what I had on hand)

Poured my veggies into my egg mixture and whisked it all together

Preheated my oven to 350 degrees

Sprayed non stick canola spray in my muffin pan, then poured in my egg mixture
Let it cook for 15 minutes or until top is firm, you can insert a tooth pick to see if it comes out clean.

This made me 2 1\2 muffins -I ate 1 1\2 for breakfast\lunch and the other one for a snack about 30 minute ago. Yes I forgot to take pictures but I will tonight, you can make these ahead of time and put in fridge, should stay fresh for 4 days

Now I also did a fat burner drink...follow me😀

1 half cucumber
1 cup pineapples
1half grapefruit
1 tablespoon chia seeds
1teasppon ginger
2 fresh squeeze lemons
1cup of water
Blended it all together and poured on some ice
Very refreshing and actually taste good

    I read that as healthy egg mcmuffin and wondered why the carrot and onion-- it made sense after re-reading. I'm going to make a tray of them to freeze for a quick breakfast or lunch-- the drink looks good, too!
