Healthy Chia Muffins

Today has been all about me eating healthy in my kitchen, instead of out of my jobs cafeteria emoticon or one of my normal smoothies( think I'm burned out on them) so I been baking emoticon

Oh my goodness I just made me a healthy snack emoticon shall we take a look!!

I combine tablespoon of Chia Seed and 3 tablespoons of water in a bowl, stirred it up and let it sit for about 15 minutes

1/2 cup mashed ripe bananas ( about 2 small bananas)
1/4 cup all natural peanut butter ( I use jiffy)

1-1/2 cup of quick oats
1 teaspoon of cinnamon
1/2 teaspoon baking powder
1/2 teaspoon of sea salt
1/2 cup mini dark chocolate chips
1/2 cup unsweetened almond milk

Add all ingredients to the Chia Egg( Chia seed and water mixture)

Preheat oven to 350 degrees and spray muffin pan
Use a1/4 measuring cup to scoop the batter into the muffin pan

Bake for 15 minutes as well

You can use toppings like non fat yogurt, fruit or maple syrup...etc

I topped my muffin with raisins and raw honey, it is so yummy emoticon emoticon
