i've been struggling with meal planning. my dh is picky and i dont want to go buy a bunch of items that may not be healthy. i found some recipies that interested me but they used sauces and dressing s that are high in salt.

The easiest way to microwave corn on the cob is to put it in with husks and silks on. Just put one or more in the microwave. Cook on high for 4 minutes. Be VERY careul peeling the husk as it will be HOT. The husks and silk come off very easily.

The first step in getting somewhere is by deciding not to stay where you're at.

join allrecipes.com and go to healthy meals,there they have lists of different kinds of healthy recipes,for breakfast you have to go to their breakfast menu. If you join you can change the amount of servings in a recipe before you save it or when you come back to it.

things i pick up from the deli. i am in a the middle of a move so my hubby is at the other house and some of our kitchen stuff is at 2 different places so somethimes i cant be as spontaneaous about meals

Egg whites (they come in a small bottle like milk) are very handy to mix with veggies for a quickie frittata. Tofu is also nice for stir frying.

Wrap ears of corn in wet paper towels and nuke for about 3 minutes. Be very careful removing the paper. The corn in steamy hot and crunchy.

I know this sounds a little nuts, but it does work.

Tonight nuked taters, plain lowfat yogurt mixed w/ turmeric, garlic powder, and fresh cracked black pepper for topping; steamed chicken breast served on cooked kale, and nuked carrots. (The juices from the chicken and kale will go for making soup along with the chix-bones another day). emoticon emoticon emoticon emoticon emoticon

I keep all my leftover pieces from cutting veggies, meats, onions, garlic, etc., and freeze them for making soup-stock. mmm-mmm good. emoticon

I keep my cooked beans in the freezer (2 cups containers) and take out what I need. I try to have at least 2 meatless meals (or days) during the week. Apot of veggie soup goes a long way too. I eat eggs and nuts for extra protein and good fats.

Sunday Night I grilled Chicken, Steak & Hotdogs/Sausages. This makes it quick and easy to have dinner on the table in no time. Tonight we will consume the steak. I had chicken in a premade salad for lunch today. Will have chicken and leftovers for lunch tomorrow. Have the grilled sausages (1) at breakfast with a bit of cereal. Keeping things fast and not eating out. Did not remember to plan a Mexican meal on The 5th of May. My big ole grilled chicken sandwich was just fine and yummy. Tonight I have fresh Corn to just pop in the microwave to go with the steak.

This weekend hubby and I shared a frozen pizza and I made and extra yummy salad. This way we get the good veggies and fiber in the salad and you don't have to feel as bad because you didn't eat the whole pizza yourself.

I had a "BLT" sandwich in 1978 while visiting Southern California which had sprouts, avocado, tomato, spinach, and heated walnuts sprinkled with chipolte and smoked paprika, yogurt cheese and toasted true whole grain bread.

It was very good, but they erred when they called it a veggie "BLT". I've used walnuts even in certain pasta dishes. But walnuts do not substitute for real bacon -- enjoy them for their own sake.

Just thought I'd pass that along.

I was able to find Spring Roll rice wrappers yesterday. I'm looking forward to making some fresh wraps for lunch next week. They have always looked so good when I have seen them on TV.

I've been trying new food combinations and focusing on more vegetables with bean and rice conbinations this week. I have noticed on my tracker that I am consuming less and less protien. Does anyone have any ideas what I can do without using protien powders or substitutes to add more non meat protiens items to my diet so my protien ranges can get back into the recommended ranges again.


To me HEALTH means Energy. Stamina. Flexibilty. A relatively pain free body. Enjoying healthy food. You are your body, and your weight loss efforts will succeed exactly to the extent that you mange to do the work on behalf of your embodied self. You’ll do much better when you focus on making positive changes to improve your health and well-being, rather than on fighting your bad habits.

When we make a casserole type meal like lasagna or chicken enchiladas, I will get a couple of small pans and portion out the meal in those. We will have one dish, typically with enough left overs for the next day's lunch & maybe a day later in the week. But then I will freeze the other pan(s) and have a quick meal for a week or so down the road. Or, if a friend is sick & needs a meal brought, then I have something I can pull out really quickly for them.

We often have boneless pork chops seared in a cast-iron skillet and finished off in the oven with a microwaved baked potato and steamed broccoli. Its a quick weekday meal. Most of the time we half the potato between us.

Lots of times we have breakfast for supper. Most breakfast items are quick, simple and you can almost get it all done in one skillet and the toaster. A little sliced fruit and yippy it's over.
Turkey bacon, Turkey Sausage and Egg substitutes can cut down on the bad for you factor if you are watching your intake of assorted things. Whole Wheat Toast or Whole Wheat English muffins.

I'm starting a new meal plan and I've built in leftovers throughout the week and then Saturday is leftover day (whatever's left) or spaghetti, since I always have that on hand.

I only cook for 2 but always prepare for 4. That way we can have it for lunch the next day or supper. We both work. It makes it easy if I cook double batches of the protein and then just add the sides fresh. Chili coming up next as the weather turns cold towards the end of this week. It can be use on a baked potato, plain with some cheese and a spoon or if we get wild, nachos, with lots of veggies. My nachos usually looks like a salad with some chips in it. Its a way I can get down an avocado every now and then too.

I make applesauce by cutting the apples into eighths, coring and toss in the small crockpot (skins on) and putting it on low for three to five hours. Att that point I stir well and let cool, then put it in the Fridge. I have applesauce for a week or more. I also log the finished product as cooked apples not applesauce.

I really like the idea of cooking in smaller portions. I think I will use a mini crockpot sometimes to keep from overeating.

Breakfast - banana drizzled with tsp of honey and rye toast with almond butter.

The possibilities always outnumber the problems.

Some of my meals that help me out are steel cut oats in the crock pot. I cook on low overnight and wake up to breakfast. Then I put the rest in 1 cup containers and reheat the rest of the week by adding a splash of milk.

I also love low sodium boxed soups. I make those, but I add a bag of frozen veggies in to make it more filling. then I have with half a sandwich or a salad depending on my mood. The soups reheat or freeze really easily.

Zoeie - such a wonderful way to do lunch. I'm getting better about adding good things to lunch but it's taking forever in the morning. I don't have a microwave at work so it's got to be good cold and I'm not overly fond of sandwiches the night before. However, I think I can take some of the fixing ahead preparations and adapt.

The Greek dish sounds really good. I often buy fresh bell peppers (all colors) and cook them in a little olive oil and add onions and mushrooms and store it in a container. I can add the mixture to rice or to chicken or put on a Fajita salad or in a tortilla. It makes the meal preparation so much quicker. On the weekend I usually cook up several chicken breasts, several fish fillets, I really salmon, several sweet potatoes, and some brown rice. Sometimes I make homemade soup or stew or a pasta dish. Then I make my own prepared dinners by putting a meat/fish, a potato or rice, and a vegetable, in a container. I make enough for 2 meals for each day of the week then when I go to work I just grab two, one for lunch and one for dinner plus a couple of fresh fruits and some 0 % Fage Yougurt with Truvia and some additional fruit for snacks. I also try eat before 6 pm. This has helped me a lot with eating healthier and more inexpensively. I hope this helps someone else.

I had a wonderful vegetable saute this weekend at a Greek restaurant.. with minimal olive oil and garlic, saute sliced red onion, green pepper, mushrooms and red peppers.. then at the last minute add fresh spinach just until it's wilted. Finish with a dash of balsamic vinegar and a tiny sprinkle of feta. It was incredibly good.. I think because of the spinach.

Fran -- I'm not good with most leftovers either. I don't buy bulk because, well, I don't have a lot of freezer space for either cooked or frozen. If I get chicken breast, I'll get four and freeze them individually. Then, I cook them individually or in batches, but at least that way I can choose. If I buy hamburger, I do the same thing -- break it out in batches so I'm not cooking a whole pound at a time.

I've really forced myself to learn to cook for one because I don't do well with leftovers. I don't even have a microwave available for lunch at my current job so either I go out or the meal needs to be a "cold" one.

Can you freeze them? I'm not good about freezing "regular" food once I cook it but it can be done. Might be good for a quick meal. I enjoy cooking (which kind of surprises me), but sometimes there just not enough time in the evening.

Also, can you cook them individually? That's what I do when I get chicken breasts.

I took a pack of Ramen Noodles tonight (chicken flavor) and instead of making it soup, I drained the water, only used 2 TINY shakes of the seasoning packet, then added salt free garlic & herb seasoning, then added sauteed spinach, mushrooms and red onion. It was delish!

I love cookbooks, and I love to try new recipes. I've recently added Boca burgers to my meals--fewer calories than meat, still good protein.

I love to cook up chicken breasts just to have for salads or a healthy snack choice.

I frequently choose something simple such as pizza (either homemade or frozen), hot dogs or soup with grilled cheese. However, now that I have a NuWave Oven, I can cook steak and chicken straight from the freezer in approx. the same time as a thawed one would take in the regular oven!
