I highly recommend using the Spark tracker. It can help you better figure your eating plan, for both you and your son. emoticon

I struggle to eat enough. I'm usually 500-1500 short daily (recommened 1800-2400 depending on if I'm in the classroom), except in salt and carbs :/ . It has gotten to be a problem because my twelve year old son is starting to emulate me. At 5'6" per-pubescent, he needs a lot and I'm afraid my habits will become his.

My goal is to eat better, more often, and be the example he deserves.

Why do we try so hard to be like everyone else, when we were born to be unique?

Getting calories is not a problem for me. Too many calories is the problem I tackle. I plan two meals and two snacks to consume daily.

Do you use the Spark food tracker. Not only will it track calories, it will track nutrients that are in the foods, too. It will produce a record for you so you can track everything day by day. After a few days, you should be able to tell you what areas need to be addressed.

My Challenges are to:

1) Keep eating cooked meals/pre portioned snacks only.
2) Mindful eating. Don't eat when I am upset or just bored.
3) Keep doing the 5 fruits and veggies a day.
4) 8 Glasses of Water a day
5) Keep on moving: 30 minutes on good days.
20 Minutes on days that are not so good.

The problem I have are meeting my 1800 Calorie diet.
Do you have any ideas what I can do?

Spark recipes has many good choices for vegetable/vegetarian dishes.

I'm the only vegetable eater in our family of three. Like you, I like all vegetables, so I make the dishes, portion them out, and then freeze them. I do the same with soup, although they will eat most soups. It's an easy way to get my 5 a day.

I want to eat healthier by eating more vegetables. My two adult sons are picky vegetable eaters and eat only potatoes, carrots and corn. I was raised eating all vegetables and 99% of them I eat. It is difficult to cook these for just one person. I am in a small town out of Columbus, Georgia and my mother was a very, very good Southern cook. She passed this down to me. I want to learn which fruit/vegetables help me lose weight and help me keep my body in shape at age 60. I also want to learn how to eat and cook healthier.
