I have used this site often, it is recipes for one, some of them do make enough for two in my opinion, but they are basically healthy foods, some may need a little adjustment, many of their recipes have been in articles here on sparkpeople. There is even a rotating menu plan for cooking for one. Well worth browsing their site.

There is a Kindle Book producer who distributes Kindle cookbooks. All of their cookbooks are on a theme and contain on average about a months worth of recipes. Topics have included a single veggie--so 30 recipes using potatoes or another using cabbage, regions--such as southern cooking, or cuisines. The cool thing is every day this publisher, Encore, has a free Kindle cook book of the day. They give away a new book every day. Not every book is going to meet everyone's needs--but it is always nice to get something FREE! Some of the recipes are for bigger batches, so I pick ones which can be reduced and/or double a recipe to use for quick/easy pop-from-the-freezer-and-reheat meals later in the month. Here is their website where you can sign up for the free book of the day. Oh, if you don't have a kindle, Amazon will let you read it by logging in through your webbrowser or there is an app you can download for free and use.

Go to Amazon and look up Amazon Kindle Books, you can look at 10 for up to 30 days free, you can exchange any one during the 30 days so you can look at more then 10. They have a lot of free diet books, some have recipes or information.

If you join this site for free you will find that all their recipes have options to lower the serving size for one or two. If it is a large recipe for 8-10 people you might want to save it as a 4-6 person recipe for company. You may change the recipe before you save it or change it later when you come back to it before you use it. I save the recipes as a 4 person recipe for company and change it to one or two when I use it. They have many low calorie,low fat recipes and some dishes at 200-300 calories from various sites and people they get recipes from. They do have a copyright, so do not pass the recipes around.

So none of the 3 recipes I just shared are for 2, but they can be adjusted easily.
the soup freezes well and the cheese bread won't last long.

It is kind of clunky creating the SP cookbook. They've modified the site some, so I'll need to check my directions. I use SP Recipes mainly for my own recipes to calculate calories. Now it super easy to add those recipes to the food tracker.

I tried to create a SparkPeople cookbook a couple of times but could not get into it. I joined/use All Recipes: allrecipes.com/ I like that you can adjust the size of the text when you print it out and, if you are a member, adjust the number of servings and it adjusts the amounts of ingredients you need, etc.

I am a senior, I am diabetic, I am divorced and live alone. I am retired and on a very tight budget. My recipes are diabetic friendly and heart healthy and as frugal as I can manage. I hope my experiments spark some ideas and contributions for others.

My breakfast faves are Apple Juice Oatmeal with walnuts and raisins and Breakfast Sundae

For the apple juice oatmeal:

1 c apple juice
1/2 c oatmeal regular
1/4 c walnuts
1/4 c raisins
pinch of salt
splash of water
cinnamon
nutmeg

3 minutes in the microwave...Done!

for the Breakfast Sundae

1/2 c Grapenuts
1/2 c canned or fresh fruit [juice pack or extra lite syrup]
spices to suit the fruit
microwave 1 to 1 1/2 minutes (optional)

canned extra lite peaches are my fave right now with cinnamon and nutmeg
pears with cardamom are a tie for tops

top with 1/2 c cottage cheese

add sugar free sweetener if desired
